Lauter Tun


The Mash needs to be drained from the Mash Tun and the liquid separated from the grist (Schrot) and husks (Hülsen) of the spent malt. Fortunately the spent grains form a natural filter bed as they settle on the bottom of the Mash Tun. The Mash is drained through slats that are opened at the bottom and sprayed or sparged with more hot water. This ensures that none of the sugars are left behind and gives the Brewer a rich, sweet and clear wort.

Mash Separation is an important element in any brewery and while sounding seemingly simple, it is critical on many levels. A brewer needs to get the most from the Malt and needs to manage the process effectively and free up the mash tun for the next run. The sparging process also helps kill remaining enzymes and stabilize the wort.

pH Sensors for Lauter Tun



Goal of Measurement:
Over-sparging occurs if the sparge water in the lauter tun goes above 7.0 pH. Reducing the pH of the sparge liquor to between 5.2 and 6.0 reduces extraction of undesirable silicates, tannins, and polyphenols from the mash bed that can contribute to harsh flavors, hazes in the finished beer, and decreased stability. Placing a pH sensor in the sparge water will help maintain balance and eliminate this potential problem.

Dissolved Oxygen Sensors for Lauter Tun



Goal of Measurement:
Oxygen uptake in the lauter tun will have an adverse effect on the stability of the beer (flavour, color, clarity, reduced shelf life). Online dissolved oxygen monitoring will help to avoid Hot Side Aeration. Accurate monitoring of trace levels of dissolved oxygen in beer is possible. Sensors inside the lauter tun need to have a robust membrane to withstand many clean-in-place (CIP) cycles.
