Yeast Propagation


Cold trub elimination by flotation is faster than filtering and can be combined with aeration. During the flotation process, the cold wort is pumped into a tank while sterile air is injected from the bottom of this tank. The air bubbles bind the cold trub and surface it in form of a thick froth that can be skimmed off.

Aeration prior to fermenting is the only time when wort or beer is deliberately brought into contact with oxygen. The oxygen added is consumed by the yeast within a few yours, it does not adversely affect the quality of the beer.

Yeast turns a bitter wort into beer. The major beer styles are classified along the lines of ales, lagers, lambics or others – primarily based on the type of yeast used to grow, brewing yeast requires a carbohydrate source (the fermentable sugars in the wort), a nitrogen source (amino acid and peptides from the malt), vitamins, inorganic ions and water. The wort must be aerated to 7 – 20 ppm, Ale strains usually need between 8-12 ppm, lager strains require slightly higher amounts (10-15 ppm).

Yeast grows well at acidic pH, best between pH 4 to pH 6. Normal wort is acidic with a pH near 5.2.
